# Almazaras (olive oil presses)

The province of Huesca has age-old olive trees from which high quality olive oil is extracted by for the most part traditional methods. The Empeltre, Verdeña (indigenous) and Arbequina varieties, either by themselves or in combination, produce oils which are thick and clear and have a very characteristic flavour.

Tradition is important in olive oil production, and the almazaras which we will visit have decades of experience. In many cases, the skills have been passed on from generation to generation. This knowledge, employed alongside the latest technology, makes the quality of the olive oil from this area one of the best in Spain.
